Urszula Janusz from the pastry shop Urszi Cakes told about the glow and shadows of conducting business famous in social media. In an interview with “Fakt” she did not hide that part of her work was very stressful.

A popular place is not always the benefits in gastronomy. Urszula Janusz, whose buns with wild strawberries and whipped cream for PLN 59 became a hit, tried to explain this in an interview with the daily “Fakt”. At the beginning she explained the high price issue.

The most expensive rolls in Poland. Where does such a price come from?

– Let’s start with the fact that the price depends on how much raw material costs. When it comes to a berry, it is such a classic, sauté, it costs us PLN 30.90, and the one with 32.99 cream. These prices do not result from the fact that we are a well -known confectionery. We just count it according to “Food Costu”, a standard gastronomic conversion rate that is generally available – she said.

– This is not some secret knowledge. But above all, such prices result from the fact that our blueberries, crab pads and other cookies are simply large. If we have such a classic blueberry in a confectionery, it usually weighs about 100 g. Ours, however, weigh about 350 g, so this is a product 3.5 times larger – she noted.

– Our prices are also determined by the product we use, i.e. berries. These are, of course, Polish berries and we give them a lot – above 134 g per cookie. In addition, there are other products: we have free -range eggs, we have real cream, fresh butter 82 percent. As if we would do it at home. These are products that we are not afraid to use, we do not have substitutes, we do not use lobeers – she assured.

Urszula Janusz: We do everything by hand

Janusz also emphasized that everything in her confectionery is made by hand, except of course the cake that kneades the mixer. – Then we dare manually every ball, roll it, apply berries, make it, then grease with egg, then crumble. Then pudding – we do everything by hand. And hence this high price. If we gave a lower price, we would not stay on the market – she explained.

– People who have not had contact with a gastronom may not realize what the price is due to. But everyone can find a place they want to go to. There are cheaper and more expensive places, prices are public, everyone sees how much it costs. We don’t hide it – she added.

The woman pointed out that Jagodzianki are the most popular every year. It is then that the largest queues form and there is the most stress. – These are the worst moments when all cookies sell out and just for someone is missing. It arouses a lot of emotions – if someone stands in a queue for a long time and it won’t be enough for him. I understand this, of course, but, although we try, we are not able to avoid such situations – she said.

– I, as the owner, stresses it very much because I would like to please everyone. I take these negative comments to myself and I’m just sorry. For example, the Lord writes that he stood two hours in a queue, in the rain, and did not get Jagodzianka. We always explain that even if we wanted, we are not able to do more – she argued.
